Fluffy pancakes from Åland - Pancake in the oven

Åland is an archipelago in the Baltic Sea, belonging to Finland. It is the smallest region in the country and its official language is Swedish. The Åland archipelago consists of more than 6,500 islands and is known for its nature, apple orchards, lighthouses and, of course, delicious Åland pancakes.

They can be prepared quickly if you have an unexpected visitor and little in the pantry. You can even use what's left over from your morning porridge, season and make a pancake.

Åland pancake is a type of baked pancake, made with semolina or rice and flavored with cardamom. It can be served with jam, whipped cream or honey.

1 liter of milk

1½ dl semolina

1 teaspoon salt

3 eggs

1½ dl of strong wheat flour

1 dl of sugar


  1. Boil the milk in a covered pan and whisk with the semolina. Boil slowly, stirring occasionally, for 10 minutes. Add salt and let cool.
  2. Beat the eggs with the porridge. Add the flour, sugars and cardamom. Pour the batter onto the greased parchment paper in the oven tray.
  3. Bake the pancake in the middle of the oven at 200 degrees for about 30 minutes.
  4. Whip cream and serve pancake with whipped cream, berries, or Honey with Berry .
