No Bake Granola Bars

This recipe for no-bake granola bars is very easy to prepare, being ideal to have the most nutritious and healthy snacks, prepared considering Real Food and sweetened with natural honey.

Ingredients:

  • 375g / 1.5 cup creamy natural peanut butter
  • 335g / 1 cup Honey with Berry
  • 25g / 2 tablespoons coconut oil
  • 4g / 1 teaspoon pure vanilla extract
  • 180g / 2 cups oat flakes
  • 135g / 1.5 cups quick cook oats
  • 85g / ½ cup mini chocolate chips
  • 60g / ½ cup of chopped peanuts
  • Sea salt flakes, to decorate

Instructions:

  1. Line a 9×9-inch square pan with parchment paper and spray very lightly with nonstick baking spray.
  2. Add the peanut butter, honey, and coconut oil to a large microwave-safe bowl. Microwave for 1 minute.
  3. Stir in peanut butter mixture until smooth and thick. Add the vanilla and stir to combine.
  4. Next, add the oats and fold in, making sure the oats are evenly coated with the wet ingredients. When the oats are almost fully incorporated, add half the chocolate chips and half the peanuts. Continue folding until completely combined.
  5. Transfer the mixture to your prepared pan and spread it evenly with your spatula. Sprinkle over chocolate chips and remaining peanuts.
  6. Place a piece of parchment paper on top of the granola bars and press them into the pan. You want to pack them really tight so they stay together!
  7. Transfer the granola bars to the refrigerator to chill for at least 2 hours, making sure to leave them covered with parchment paper on top!
  8. Remove the granola bars from the pan, chop them up, and enjoy.
  9. Store granola bars in an airtight container in the refrigerator for up to five days.

Tips:

Be sure to use natural creamy peanut butter that has been stirred well. The extra moisture in all-natural peanut butter helps hold granola bars together.
